One of my favorite restaurant in town is Cépage. My regular readers would have read my previous post on this restaurant. Only shortly opening, they already acquired one Michelin star in the 2010 Michelin Guide. They have recently changed to a new chef. Mr Sebastien Lepinoy, who previously worked at L’Atelier de Joël Robuchon, left Robuchon to join Cépage as the new resident chef.
We went there for lunch on 1st October, a holiday in Hong Kong in celebration of Chinese National Day. I can say Sebastien Lepinoy has managed to raise the standard of cuisine at Cépage to a new level. Sebastien is very artistic and the presentation of the food he served were very pleasing. His use of ingredients are also quite adventurist. The prefect blend of Asian and Western ingredients with top class Western cooking techniques resulted in exquisitely delicious “fusion” style cuisine.
Sebastien has definitely brought a breath of fresh air to Cépage and in my humble opinion, he would have easily raised the standard of cuisine here by at least a star or two. We will soon find out in the new 2011 Michelin Guide at the end of this year if Cépage will indeed gain another star or two.

In my opinion which does not count I feel this is some of your finest work yet Roland. where the focus is, its really crisp as you can reach out, and touch, beautifully done.
I just wanted to notify you that the great french cooker’s real name is Joël Robuchon and not Rubuchon.
