The Chairman (大班樓) is a Chinese restaurant at Kau U Fong, a relatively quiet street in the bustling Central business district. They are a relatively new restaurant, but have already made quite a name in that there is already a long waiting list for dinner reservation. Be prepared to wait for at least 2 months if you want to have dinner there. Lunch time booking is not so full and they basically serve the same dishes as for dinner, so it would be worthwhile to try the lunch there instead of dinner.
The cuisine they serve is quite traditional Cantonese fare, none of those popular fusion and new style Chinese cuisine. However, what they do, they do quite well using only the freshest and best ingredients. The prices although not exactly cheap, are still reasonable.
